Star anise is graded on how many points survive drying intact. Broken stars are cheaper and everywhere; whole ones hold their aroma far longer because the seed stays enclosed until you break it.
We source from the Lang Son highlands, where the trees are old-growth and the stars come up large and mahogany-dark. Sorted by hand for unbroken form.
One star is usually enough for a pot of broth — the anethole in it is powerful, and it is very easy to overshoot.

For whole spice, dry-toast in a pan over medium heat for 30–60 seconds until fragrant, then grind. Toasting wakes up the volatile oils and makes a noticeable difference to depth.
Keep the pouch sealed, away from light and heat — the cupboard above the hob is the worst place in most kitchens. Whole spice will hold for 18–24 months stored properly; ground spice is at its best within three months of the grind date printed on the back.
