Saffron is the most adulterated spice on earth, so grading matters more here than anywhere else. What separates real quality is how much of the yellow style — the tasteless stalk the stigma is attached to — has been trimmed away.
Ours is all-red: the crimson tips only, hand-trimmed. Around 450 threads to the gram, with a crocin reading that puts it firmly in Category I.
Bloom in a tablespoon of warm — never boiling — milk or water for twenty minutes before use. Adding threads dry to a pot wastes most of what you paid for.
Biryani, paella, risotto Milanese, saffron buns, kheer.
For whole spice, dry-toast in a pan over medium heat for 30–60 seconds until fragrant, then grind. Toasting wakes up the volatile oils and makes a noticeable difference to depth.
Keep the pouch sealed, away from light and heat — the cupboard above the hob is the worst place in most kitchens. Whole spice will hold for 18–24 months stored properly; ground spice is at its best within three months of the grind date printed on the back.
