The Kashmiri is prized for what it does to a dish visually. Around 1,500–2,000 SHU — milder than a jalapeño — but with an extraordinary pigment load that turns a gravy that glowing restaurant red without any of the burn.
We buy whole and sun-dried rather than pre-ground, because ground chilli loses colour within weeks of milling. Slit the pod, shake out the seeds if you want it milder still, and either soak into a paste or dry-toast for thirty seconds before grinding.
No added colourants. What you see in the pan came from the pod.
Rogan josh, tandoori marinades, chilli oil, romesco, anything needing colour without fire.
For whole spice, dry-toast in a pan over medium heat for 30–60 seconds until fragrant, then grind. Toasting wakes up the volatile oils and makes a noticeable difference to depth.
Keep the pouch sealed, away from light and heat — the cupboard above the hob is the worst place in most kitchens. Whole spice will hold for 18–24 months stored properly; ground spice is at its best within three months of the grind date printed on the back.
