Nutmeg is the seed; mace is the crimson aril that grows around it. Same fruit, two completely different flavours — nutmeg is sweet, dense and woody, while mace is brighter, more peppery, and far more delicate.
We pack both together because they're rarely sold as a pair and cooks who have them side by side quickly stop reaching for the same one out of habit.
Nutmeg must be grated fresh — pre-ground nutmeg loses most of its character within a month. A microplane and four passes is all a dish needs.

For whole spice, dry-toast in a pan over medium heat for 30–60 seconds until fragrant, then grind. Toasting wakes up the volatile oils and makes a noticeable difference to depth.
Keep the pouch sealed, away from light and heat — the cupboard above the hob is the worst place in most kitchens. Whole spice will hold for 18–24 months stored properly; ground spice is at its best within three months of the grind date printed on the back.
