Garam masala is a finishing blend, not a base — the name means 'warming spices', and it goes in at the end where its aromatics survive.
Ours is built from eleven components: Tellicherry pepper, green and black cardamom, Ceylon cinnamon, clove, cumin, coriander, mace, nutmeg, bay and star anise. Each is toasted on its own, because they reach their peak at different times and a single pan means half of them are wrong.
Blended weekly in 4kg batches. There is no version of this that keeps for a year, which is why we don't make a year's worth.
Stirred in at the end of curries, dals, kebab mixes, roast vegetables.
For whole spice, dry-toast in a pan over medium heat for 30–60 seconds until fragrant, then grind. Toasting wakes up the volatile oils and makes a noticeable difference to depth.
Keep the pouch sealed, away from light and heat — the cupboard above the hob is the worst place in most kitchens. Whole spice will hold for 18–24 months stored properly; ground spice is at its best within three months of the grind date printed on the back.
