Tellicherry is not a place so much as a grade. Only the largest berries — left on the vine weeks longer than standard black pepper — are allowed to carry the name. That extra time on the plant is what builds the fruit sugars and volatile oils behind the grade's famous perfume.
Ours come from a cluster of smallholdings above Wayanad, hand-sorted on 4.75mm screens and cured on raised beds rather than roadside tarmac. We buy the current harvest only, and we mill nothing until you order — so the oils are still in the berry when the pouch is sealed.
Crack it coarse over a finished dish and you'll taste why chefs pay the premium: heat arrives late and clean, behind a wave of citrus peel and pine.
Steak crusts, cacio e pepe, fresh pineapple, any dish where pepper is the point rather than the background.
For whole spice, dry-toast in a pan over medium heat for 30–60 seconds until fragrant, then grind. Toasting wakes up the volatile oils and makes a noticeable difference to depth.
Keep the pouch sealed, away from light and heat — the cupboard above the hob is the worst place in most kitchens. Whole spice will hold for 18–24 months stored properly; ground spice is at its best within three months of the grind date printed on the back.
