A clove is an unopened flower bud, and timing the pick is everything. Too early and there's no oil; too late and the bud opens, the head drops off, and what's left is a woody stem with little to give.
We take ours at the blush stage, when the buds have just turned from green to pink, then sun-dry until they darken to deep russet. A good clove should leave an oily mark when pressed against paper — ours do.
Use sparingly. Clove is the loudest thing in most spice cupboards and will happily take over a dish.
Biryani, garam masala, baked ham, mulled cider, pickling brines.
For whole spice, dry-toast in a pan over medium heat for 30–60 seconds until fragrant, then grind. Toasting wakes up the volatile oils and makes a noticeable difference to depth.
Keep the pouch sealed, away from light and heat — the cupboard above the hob is the worst place in most kitchens. Whole spice will hold for 18–24 months stored properly; ground spice is at its best within three months of the grind date printed on the back.
