Cumin is the workhorse, and quality shows up in the toast. Cheap cumin is cut with stem and grit and tastes dusty when it hits hot oil. Bold-grade seed is longer, plumper and cleaner, and it blooms rather than burns.
From Unjha in Gujarat, the largest cumin market in the world, cleaned through gravity separators and steam-sterilised rather than fumigated with ethylene oxide.
Toast whole in a dry pan for thirty seconds until it smells nutty, then grind. The difference against pre-ground cumin is not subtle.

For whole spice, dry-toast in a pan over medium heat for 30–60 seconds until fragrant, then grind. Toasting wakes up the volatile oils and makes a noticeable difference to depth.
Keep the pouch sealed, away from light and heat — the cupboard above the hob is the worst place in most kitchens. Whole spice will hold for 18–24 months stored properly; ground spice is at its best within three months of the grind date printed on the back.
